Pan-Seared Salmon & Kale Apple Salad

Did you know that salmon is one of the healthiest foods on the planet? Rich in essential fats like omega-3, up to 2 servings a week can help meet your omega-3 fatty acid needs! Health benefits include reduced inflammation, lower blood pressure, and decrease risk factors for disease. This sounds great , but if you are like me , you may be nervous to cook fish! I am going to be brave and try again! Here is the recipe!


  • 16 oz of Pink Salmon

  • 3 tbsp Lemon Juice

  • 2 tbsp Olive Oil

  • 1 tsp Pepper

  • 1 tsp Salt

  • 3 cups Kale, chopped, ribs removed

  • 1 medium Appple


  1. Bring the salmon to room temperature 10 min before cooking.

  2. Meanwhile, whisk together the lemon juice, 1 tbsp of olive oil, and 1/4 tsp salt in a large bowl. Add the kale, toss to coat and let stand 10 minutes.

  3. While the kale stands, cut the apple into matchsticks. Add the apples to the kale. Season with pepper, toss well and set aside.

  4. Sprinkle the salmon over with 1/2 tsp salt and some pepper. Heat the remaining 1 tbsp oil in a large nonstick skillet over medium low heat.

  5. Raise the heat to medium-high. Place salmon skin-side up in the pan. Cook until golden brown on one side, about 4 minutes. Turn the fish over with a spatula and cook until it is firm to the touch, about 3 minutes.

  6. Enjoy!
